5 large eggs
1 cup milk
1 cup shredded mozzarella cheese
1/8 t salt
1/4 t pepper
1 cup small broccoli florets
1/4 c sautéed chopped red pepper
1 c cubed French bread
1 c pork sausage, cooked
Whisk together eggs, milk, cheese, salt, and pepper in large bowl. Stir in broccoli, red pepper, bread, and sausage. Coat four 8 oz ramekins with cooking spray. Pour egg mixture into ramekins. Thinly slice tomato and cut each slice into quarters. Place two quarters on the top of each strata and sprinkle with salt and pepper. Place ramekins on cookie sheet and cover with plastic wrap if storing overnight (can also be made right before baking and service.)
Preheat over to 350 degrees, remove plastic wrap and bake on cookie sheet for 30 minutes or until top is lightly brown and eggs are cooked through.
Serve in ramekins.
